Brian Jones' Hot and Sweet Grilled Chicken

My recipe for hot and sweet grilled chicken is a big hit with all of my friends. I bring these grilled wings to every potluck that I go to and they are always the first thing to vanish. I can't make enough of them. The recipe evolved from another recipe called "Wing Zzzingers" that was featured on the old Food Network show "Calling All Cooks.”

Dry rub:

1 tsp paprika
1 tsp chili powder
1 tsp rosemary
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp black pepper
1/4 tsp salt

Mix herbs and spices. Pour mixture over several pounds of drumsticks or chicken wings in a large mixing bowl. Toss to coat evenly.

Basting Sauce:

3 Tbsp dark brown sugar
3 Tbsp Red Hot hot sauce
1 Tbsp butter
1 tsp rosemary

Combine ingredients in a small microwavable bowl.  Microwave 20 seconds.  Mix well.  Microwave another 20 seconds.  Mix well and set aside.

To Grill:

Preheat grill to high. Clean grate. Add chicken pieces. Turn heat to medium. Grill, turning often, until fat renders from under chicken skin and flare-ups reduce (approximately 10 minutes). Turn heat to medium-low. Close lid and grill chicken, turning occasionally, for another 10 minutes, 20-25 minutes total.  Baste with sauce for last two minutes only, turning occasionally. Remove when juices run clear. This recipe works equally well with wings or drumsticks. Double recipe for a crowd!
